The term 'blade' has a certain charm that 'knife' is just lacking, it sounds honorable and good-mannered. However, 'switch' is just plain bland, whereas 'butterfly' has the same charm as blade.
So I'll either take a third option and say 'Butterfly blade' or go with switch blade.
